Cooking Steak Cold

Don't throw your steak on the grill right after you take it out of the refrigerator.  Let it stand for about 30 minutes prior to grilling.1 This will allow the internal temperature to normalize, meaning that it will cook more evenly.

Meat Is Too Lean

A steak that is too lean will be tough and dry. There are many different cuts of steak and they each have different characteristics and flavors. In general, a steak with more fat will be juicier and more tender.2 Look for one with some marbling and you will have a good base to work from.

You’re Cutting It Too Soon

Don’t cut your steak right after you take it off the grill. Let it rest for around 5 minutes.3 This will allow the juices to redistribute. If you give the fibers time to sit, it will make your steak that much more flavorful.

Not Using a Thermometer

Don’t try to be the hero and try to judge your steak by the outside. A good meat thermometer inserted into the thickest cut of steak will give you an accurate reading. Different cooking methods and doneness levels require varied temperatures. You need to know when your steak is done so you can take it off the grill. Don’t guess when it comes to steak!3

The Flipping Myth

It's often said that you should only flip your steak while it is cooking.  While handling your steak too much can cause it to dry out, turning your steak a few times will help it to cook faster and will give it those desirable crosshatch grill marks!2
