Celebrate Thanksgiving or the holidays Big Green Egg style. This turkey grilling recipe will leave your family and friends satisfied and impressed.
Important note: brining takes 48 hours so make sure you plan ahead and have time to prepare
Here is everything you will need:
For the Big Green Egg-
For the Turkey-
Cook time: Varies with turkey size. Turkey is done when internal temperature reaches 160°
Prep time: 48.5 hours
Step 1- Place an oven roasting bag in the food safe bucket
Step 2- Place turkey in bag
Step 3- Add sea salt, black pepper, 2 cloves of garlic, maple syrup, 2 lemons, 1 orange, orange juice, 4 rosemary sprigs and 4 thyme sprigs to the bag.
Step 4- Add enough apple juice to fill the bag.
Step 5- Mix all ingredients
Step 6- Tie off bag
Step 7- Put in refrigerator or a cooler with ice for 24 hours
Step 8- Remove the turkey and place it in an aluminum pan
Step 9- Pat dry
Step 10- Place back in fridge or cooler for another 24 hours
Step 1- Light your Big Green Egg
Step 2- If desired, add flavored wood chips
Step 3- Add the convEGGtor plate setter for indirect cooking
Step 4- Close lid and bring temperature to 350°
Step 5- While grill is heating, remove turkey from fridge or cooler
Step 6- Season with Whirly Bird seasoning
Step 7- Place remaining garlic, rosemary, thyme, lemons and oranges in cavity of turkey
Step 8- Put v rack in aluminum pan and put turkey on v rack
Step 9- Place thermometer in breast of turkey
Step 10- Once grill reaches 350°, place turkey in pan on plate setter (use gloves) and close lid
Step 11- Cook until internal temperature reaches 160°
Step 12- Remove and prep for serving
